Reducing Equivalents






In our remote corner of Hangzhou -- Zijinggang -- there is one main drag, a series of shops and restaurants that cater to the university crowd. Pizza is distractingly the rage, as evidenced by the fact that two of the handful of restaurants on the street are Chinese-style pizza parlors.

We decided to stop in and see what all the buzz was about. We sat in a booth for a late lunch and chatted with the manager as we perused the menu.




Our first question: Is this American, Italian, or Chinese style pizza?
The manager's answer: Korean. She initially told us that the owner was Korean, but later clarified that he only learned his pizza making skills in Korea.


Nevertheless, upon noticing our trepidation, the manager assured us with a straight face that their pizza was better than 必胜客 -- the upscale restaurants that Pizza Hut runs in China. She wasn't kidding.
